Whole foods: Far better than supplements

In a study of 90 overweight smokers, European researchers found that those who took a garlic powder supplement for three months showed no changes in their cholesterol levels or several other markers of heart disease risk.

The truth is that eating whole food is so much more powerful and healing than taking a garlic pill. Allicin, the active ingredient in garlic, dissipates rapidly after being cut. So the best way to benefit from garlic and also from onion is by eating them raw and fresh.

Garlic comes with many health-promoting properties. Studies suggest that people who consume garlic regularly have longer blood clotting times and show lower blood lipid levels, which means a reduced risk of stroke and cardiovascular disease.

In addition, garlic is reputed to have antibacterial, antiviral, anti fungal, antioxidant and anti-inflammatory activity.

Eat garlic regularly. It is a great condiment in fresh juice and always appreciated in dressing.

Here is a simple, yet rich dressing made from only five ingredients:

GARLIC CREAM DRESSING
(RAWvolution by Matt Amsden)
(Makes about 2 cups)

1/4 cup fresh lemon juice
1/4 cup Nama Shoyu
8 cloves garlic, peeled
One 3-inch piece ginger, peeled
1 1/4 cups olive oil

In a high-speed blender*, combine the four first ingredients. While the blender is running, add the olive oil slowly in a stream until the dressing thickens and emulsifies (you may not use all the olive oil).

* Without a doubt, my favorite blender is Vita-Mix. I use it almost every day for sauces, dips, dressing, soups, or puddings. It is worth the investment.
