Avocados & a Healthy Recipe

Avocados are the richest source of lutein among commonly eaten fruits. Lutein is a carotenoid that acts as an antioxidant and has been linked to a reduced risk of prostate cancer.

However, when lutein is extracted from avocados, it does not offer the same anti-cancer results as the whole avocado. The carotenoids, vitamins, and diverse compounds in avocados have synergistic effects against prostate cancer, as compared with pure lutein alone.

Foods, in their original whole form, offer the best nutrition possible.

Here is a recipe of guacamole that I love from, the book RAWvolution by Matt Amsden:

Guacamole

(Serves 2 to 3)

3 medium avocados
1 cup chopped scallions
1 bunch cilantro, stems removed
1 cup chopped tomatoes
1/4 cup fresh lemon juice
1 teaspoon sea salt
3 to 4 cloves garlic, peeled
2 tablespoons olive oil

Combine all of the ingredients, mix well, and serve.
